BEST holiday treat

Hope everyone had a great holiday and that you made it through the blizzard! It was the perfect excuse to stay home and bake with the family. Speaking of baking...hands down, pumpkin cheddar muffins are the official 2010 Pink Olive holiday treat. hee-hee.

Our venture with these started when I received the Baked Explorations cookbook a little while ago...and after the first bite we were hooked! The perfect combo of sweet & savory with a kick of cayenne pepper, these are great for any occasion...here's the recipe we've been working with:

INGREDIENTS
*1 cup pumpkin puree
*3 tablespoons sour cream
*2 eggs
*1/2 cup (1 stick) unsalted butter, melted and cooled
*2 cups all-purpose flour
*1 1/2 teaspoons baking powder
*1/4 teaspoon cayenne pepper
*1 1/2 teaspoons salt
*1 1/2 teaspoons freshly ground black pepper
*1/2 cup firmly packed dark brown sugar
*1 1/4 cups grated sharp cheddar

DIRECTIONS
*preheat oven to 400 degrees F
*lightly oil 12-muffin pan
*whisk together pumpkin and sour cream. Add eggs, butter, and whisk till combined
*in a separate bowl, whisk dry ingredients (flour, baking powder, cayenne pepper, salt, blk pepper, and brown sugar)
*make a well in the middle of the dry ingredients and pour the wet ingredients to fold until combined
*fold in 3/4 of the grated cheese
*divide batter in the muffin tin and sprinkle remaining cheddar on top
*bake for 15/20 minutes or until golden brown

tADAAA! and you now have delicious muffins to take to the New Year's party :)
